Our Wood-Fire Grill is fueled by oak wood.
Oak wood lends mild smoke flavor without an aftertaste and also gives food a beautiful smoked color. This wood is perfect for grilling our lean* proteins, which include beef, chicken, pork and fish. Using lean proteins limits the amount of naturally occurring fat that is added to our grill. At its hottest, our wood-fire grill heats up to our target temperature of a smoldering 550 degrees. The high heat cooks our protein quickly and seals in the natural juices, which lets the natural flavors shine.
Our signature grill baste and sauces are flavorful, but don’t drive up calories and fat.
Our grilled beef, pork and chicken are lightly brushed with our signature grill baste to complement the natural wood-grilled flavors. Our grille baste is made up of olive oil and 14 herbs and spices that naturally complement our proteins. Also, the baste is gluten-free.
Many of Carrabba’s wood-fire grilled entrees are also topped with yummy sauces like tomato basil vinaigrette on our Wood-Grilled Salmon or port-wine-fig sauce on our Prosciutto-Wrapped Pork Tenderloin. We top our proteins with enough sauce to elevate the flavor profile, but not too much that it overpowers our wood-grill flavors and drives up calories and fat.
