We are proud to announce that we will be featuring a special and delicious new menu item called Snapper Sapri for a VERY limited time starting in February, while supplies last. Now you might be asking, what is so special about this dish? The answer is – it’s all in the fish.
Our snapper is line-caught in the Asia-Pacific Ocean. Each day two men on a single boat go out into the Asia-Pacific Ocean and fish for our snapper. The fish naturally feeds on shrimp and smaller fish giving it a lovely flavor to complement our grill. Flavors like this can only be created in nature so we are sourcing this wild-caught fish straight from the sea. This fish is so special that it is protected from over-fishing so we only have a limited supply to offer our guests.
From February 10th – March 24th, you can enjoy this fish prepared on our wood-fire grill, topped with a light lemon butter sauce, asparagus, diced tomatoes and fresh basil. We call this dish “Snapper Sapri” because it was inspired by the Italian coastal town of Sapri which is situated just south of Naples and known for its seafood.
What to expect: This fish is a flaky white fish with low fat content. Oil or butter based sauces will keep this fish moist and balanced. We serve it almost whole with the skin on to lock in moisture. We recommend pairing Snapper Sapri with a white or light red wine.
